Will a T-5 from a 305 work with a 2.8? What about the clutch and hydraulics?

No. Different input length, spline count, disc and pressure plate size. Physically, yes it will bolt up to the bellhousing.

Pedals and hydraulics are interchangable between V6 and V8.
