I am looking into a new set of valve covers. Since mine have a bow in them. I have noticed that a lot of the valve covers do not have breather caps. Are the breathers required?

Yes, a breather of some kind is required. And some place to put the pcv valve too. Baffles are nice as well or your pcv system will be suckin oil.

There are rubber grommets made to fit. Usually a couple different sizes. One sized for a pcv valve, the other sized for a breather so you can pull it and fill the oil too.
