So on a stock disc front brake setup.... how much force do the pins see and how much force does the spindle flange (where it meets the side of the caliper) see? Shouldn't the pin's take the brunt of the force? Are the spindle flanges just there for pin failure, or does the pin flex acutally put the weight on the spindle?

I built some brackets to adapt my stock brakes to the chevette and have 1/16" gap between the caliper and bracket. Trying to figure out if I need to take them off and add some meat to it.

The pins shouldnt hold anything. Most are actually mounted in rubber. The sides of the caliper should take the force. Many brakes actually have shims you need to install to get so many 0.001s of clearance.
